Need help!

Hello and Happy Groundhogs Day 2011!

Since I live in PA, I might as well spread some knowledge about Punxsutawney Phil!

On February 2nd, Phil comes out of his burrow on Gobbler’s Knob, in front of thousands of faithful followers from all over the world, to predict the weather for the rest of the winter.

According to legend, if Punxsutawney Phil sees his shadow, there will be six more weeks of winter weather. If he does not see his shadow, there will be an early spring.

The celebration of Groundhog Day began with the Germans, Pennsylvania’s earliest settlers. They brought with them the legend of Candlemas Day, which states “For as the sun shines on Candlemas day, so far will the snow swirl in May…”. The settlers found that groundhogs were plentiful and were the most intelligent and sensible animal to carry on the legend of Candlemas Day.

Punxsutawney held its first Groundhog Day in the 1800’s. The first official trek to Gobbler’s Knob made on February 2nd, 1887. In 2008 it will be the 122nd prediction.

I also wanted to say thanks (again) to everyone. I still feel sick.. but reading all the well wishers is very nice!!

Now onto why I need help:

I plan a weekly dinner menu for my family. Around Wednesday-Saturday I brain storm meals for the next week or look up cool new recipes to try.

Sometimes I make classic dinners like spaghetti & eggplant parm (above) or corn bread fried chicken (below)

Sometimes I go a different route and try an hour long (or even longer..) recipe like:

Portuguese Chicken w/ Chorizo (Spanish sausage)

Now I want to know..

Any recommendations for next week?!

  1. I hope to goodness he doesn’t see his shadow. But then again, I don’t know why I’m putting so much emotional pressure on a groundhog. Issues!

    Hmm, if your family likes ethnic food what about some channa masala and tandoori chicken? Or a butternut squash lasagna? I’ve heard that the food network has a good recipe. Or pancakes!

  2. I hope he doesn’t seen his shadow. We have gotten 6 inches of snow in the last 12 hours.

    I agree with breakfast for dinner ha. Sorry I’m not too much help, I’m cooking for one right now so don’t get to try a lot of recipes. 😦

  3. I made a homemade tomato sauce last night out of tomato paste, veggie broth, and nutritional yeast, served with brown rice pasta, baby clams, and brussels sprouts! It was delicious 🙂

  4. Wow that is great that you make a weekly dinner menu. My mom did that as well growing up and she always asked us for new ideas or old favorites that we’d like to have again. Stir-fry is always delish, tacos (this gives a lot of variety), crock pot dinners (check out http://crockpot365.blogspot.com/) or soup or stew (since its winter). You could also ask family members to suggest an ingredient they’d like in a meal and build a meal around that ingredient. I miss making dinners since we have a restaurant and the main meal we eat is lunch and in the evening we have something light like a fruit salad or a smoothie, (since we don’t close till 9 or 10 at night we dont have sit-down dinners except sunday) because making a regular sit down dinner and eating it that late isn’t exactly ideal. good luck! there are a TON of good websites with meal ideas, if you need more suggestions let me know!

    I like ethnic stuff, but am usually too in a hurry to cook it- and my hubby doesn’t share my tastes. I would probably do some greek style dishes and also love thai stuff.
